Updates of documentation with respect to k8s deployments

With current development with k8s helm templates + vs_starter most of the setup of vs as a single piece of software is obsolete in our operator-guide.

The operator guide would need a structural update + update into component specific information regarding env variables/configs/values.

I think we could then split the deployment to k8s deployment (take as is + update values like in flux) and swarm deployment extra steps of creating the config using vs_starter.

The operations on the actual nodes still would be pretty much similar.
